Vegetarian bean chili
As a vegetarian I eat a lot of beans. I love them. Beans are considered good carbohydrates, and they’re a great source of fibre, antioxidants and protein. Researchers have found that beans help people fight a number of chronic diseases including cancer, heart disease, obesity and diabetes.
So despite the flatulence, it doesn’t hurt to introduce them into your diet. Here’s my vegetarian chili recipe to help you get started.
1 can of chic peas
1 can of kidney beans
1 can of black beans
1 can of lentils
1 can tomato sauce
A handful of cherry tomatoes
1 tbsp of red pepper flakes
2 tbsp of chili powder
A pinch of salt
A brick of firm tofu, chopped
Put all the ingredients into the crockpot and cook for 5 to 6 hours. Serve with whole-grain bread. You can also add sour cream and/or cheese.
